Wine of Origin: Stellenbosch
Blend: 100% Chardonnay
Barrel ageing: 15% in French oak for nine months
Maturation: Drink 2014 through to 2019

Healthy, ripe grapes where harvested from prime Stellenbosch sites in close proximity to False Bay from the beginning to the middle of February 2013. Once destemmed and crushed, oxidative juice handling followed, and only at the time of settling was the first addition of sulphur made to the juice.

Once racked, approximately 15% of the wine was fermented in a selection of new and 2nd fill barriques, the remainder being fermented in stainless steel tanks. Malolactic fermentation was blocked by a further addition of sulphur at the end of alcoholic fermentation, and the wines were all stored on their fine lees up until the time of bottling preparation in October of 2013.


Our Winemakers’ Tasting Notes

Lively, showing fresh hay tints and a very light green hue. This is a bold Chardonnay with lovely rich, creamy aromatics. Subtle citrus aromas are underpinned by restrained oak, and exotic five spice, nutmeg and cardamon. The rich, round and creamy palate is balanced by taut, linear acidity and a fine, chalky texture. Tropical fruit flavours of papaya and dried mango fill the mid-palate, whilst the finish is marked by a resounding pithy, lime-like note.
