Maturation: 5 – 7 years from date of vintage
With so much effort focussed on selecting and monitoring the very best vineyards to produce Mulderbosch Chardonnay, the winemaking side of things is kept as simple as possible. From the hand picked bunches of grapes we receive, a portion is destemmed before pressing, and a portion is pressed as whole bunches. As little sulphur as possible is added to the juice in order to encourage precipitation of phenolic compounds before fermentation. We prefer to block malolactic fermentation, so the wines are sulphured immediately after alcoholic fermentation, the idea being to capture as much natural acidity and freshness as possible. Maturation on lees in tank and barrel lasts 12 months before the individual components are brought together for blending and bottling preparation
Pairs well with grilled pork, chicken or prawns, as well as spicy foods like jalapeno poppers!
Light green golden in appearance. Opulent aromas of ripe peaches and melon mingle with hazelnuts, vanilla pod and touches of marzipan. The richly layered palate has a firm texture, yet retains a citrus like freshness and ends on a lasting, mineral note.
