After rigorous selection of all five Bordeaux varieties from some of the finest vineyards in the Cape, we have the option of sorting grapes on arrival before destemming begins. The fermentation process is initiated by naturally occurring yeast, and finished by a selected strain, added during the course of fermentation. Gentle extraction and long maceration time are the hallmarks of the winemaking style, followed by barrel maturation.
Red meat, dairy or tomato based pastas. A glass on its own goes down well too!
Lovely deep ruby in appearance, with a densely coloured core. Layers of complex aromas, from bright herbal top notes to subtle sandalwood and cigar box base notes. Ripe bramble berries and plums entice with their generous fruity notes. The layered palate leads with a creamy, seductive entry onto fine grained, chalky tannins, accentuating the savoury nature of this wine, and finishes on a persitently fresh yet harmonious note.
