After rigorous selection of all five Bordeaux varieties from some of the finest vineyards in the Cape, we have the option of sorting grapes on arrival before destemming begins. The fermentation process is initiated by naturally occurring yeast, and finished by a selected strain, added during the course of fermentation. Gentle extraction and long maceration time are the hallmarks of the winemaking style, followed by barrel maturation.
Beautifully rich in appearance, showing a deep, dark core. Seductive aromas of ripe cherries, tobacco leaf, tilled earth and that classic cedar wood fragrance so often associated with Bordeaux-style blends.
This wine is taut, showing lovely chalky texture and plenty of concentration. Dense and compact, the tannin structure holds the blend firmly together whilst refreshing flavours of dark red fruit and earthy notes wash over the palate.
